I know a few companies not on there but I know their ATS sites. Is there a way for me to add them to the scraping or add them in general?

Yes, absolutely. Feel free to share links to their most recent Elixir job openings — here, on Reddit, or send them to me via private messages or LinkedIn — and I’ll review and add them.
